WINES “IN THE RHYTHM OF THE MOON"

They have been made with the Cosmic Calendar. The different works in the vineyards and winery: pruning, harvest, vinification, rackling, bottling, etc. have been carried out the specific days when the moon stands in front of each constellation that has a dominant character that reinforces the essential qualities:

Air: harmony of colours and subtlety of aromas

Water: softness of taste sensations

Fire: balance of the fruity characters

Earth: intense structural characters of terroir

Therefore, the wines “In the rhythm of the Moon” are able to transmit the four basic and distinctive profiles of a wine in the consumption generic typologies:

From La Bodega de las Estrellas we promote an accessible and comprehensible vocabulary which guides the consumers and allows them to identify the profile of the wines they choose. We don´t like much the so-called technical expressions but they often frighten the wine taster.

The wines “In the rhythm of the Moon” integrate in their cultivation and elaboration processes, the four elements qualities that we present without any technological trick neither oenological make-up.

WINE WITH AIR QUALITIES

Dionisos Aire

Variety: 100% Tempranillo
Harvest: 2016
% Vol.: 13,5
Certification: Tierra de Castilla wine, certified “ORGANIC” by CAAE Spain
Vineyard: proceeding from “only red” plot of El Conuco farm. Goblet trained vines that we have modified into espalier training on which we realise the entire work during Gemini, Libra or Aquarius phases. Harvest at the beginning of maturity.
Elaboration: 4 to 5 hours’ maceration. We extract part of the must before pressing and ferment it for with its own yeasts on waning moon days at low temperature. Bottling after a slight filtering.
Cosmic Calendar: with the aim of giving strength to the light character of this subtle wine, we have proceeded all the works of cultivation and elaboration when the Moon was in front of the Air constellations (Gemini, Aquarius, Libra). This way, we extract the most delicate profile of the fleshy Tempranillo grape both in aromas and flavours.
Tasting note: spectacular deep rosé colour with pearly salmon shaded highlights. Expresses very fresh floral and wild strawberries aromas which deliver in mouth all its strawberry flavours combined to papaya’s ones.
Consumption: it is the cheerful and light wine of two periods: Christmas and Spring. Periods when love of food and warmth predispose us to the subtlety and elegance of this wine. Serve between 8 and 10ºC. Ideal to combine with vegetable meals such as asparagus and cream, onion cake or carrot quiche associated with Iberian sausages. Recommended to uncork on Air influence days according to Tasting Calendar.

WINE WITH WATER QUALITIES

Dionisos Agua

Variety: 100% Syrah
Harvest: 2016
% Vol.: 13.5
Certification: Tierra de Castilla wine, certified “ORGANIC” by CAAE Spain
Vineyard: trellis vineyard from el Conuco farm. The harvest, as well as any other agricultural or elaboration process, occurs when the Moon is passing Cancer, Pisces or Scorpio constellations. Harvest is made by hand during the first hours of the days to bring back grape into boxes and submit it to a second selection before entire grapes go to maceration.
Elaboration: maceration and fermentation without oxygen for 17 days are able to produce the most beautiful alchemy. After a light filtering to preserve its naturality, it is bottled at the beginning of next year.
Cosmic Calendar: With the aim of amplifying the characters of mobility, softness and sweetness that make it very pleasant, we have proceeded all the cultivation and elaboration works when the Moon was in front of Water constellations (Scorpio, Cancer, Pisces). Thus, we have obtained a wine which arouses the taste.
Tasting note: it highlights vivid colours of the variety and mauve shades of this delicate wine. In the nose, it shows raspberry and blackberry fresh fruity aromas.
Consumption: serve between 12 and 14ºC. Perfect to come along with blue cheese and roasted white meats. It is recommended to uncork on Water influence days according to Tasting Calendar.

WINE WITH FIRE QUALITIES

Dionisos Fuego

Variety: 100% Tempranillo
Harvest: 2015
% Vol.: 13.5
Certification: Tierra de Castilla wine, certified “ORGANIC” by CAAE Spain
Elaboration: harvested by hand in September, it ferments through the action of its own yeasts in concrete jars with thick walls when the Moon is in waning phases in order to slow down the fermentation process. Maceration with the skin during 8 days. It carries out a malolactic fermentation in clay amphorae with batonage of its fine lees. Its maturation keeps going in these same amphorae until bottling.
Cosmic Calendar: We strengthen and amplify the fruity character proceeding the cultivation and elaboration works when the Moon was in front of Fire constellations (Leo, Aries, Sagittarius). We have obtained a wine with delicious fruity aromas and flavours.
Tasting note: young character, cheerful, vivid, with mauve colours and shades. Shows an amazing strength of mature red berries delicious and very sweet, wrapped into a velvety texture. It fills the mouth of sweetness and indisputable energy.
Consumption: perfect for pâtés, roasted meats, cold cuts and cheese. Enjoy between 14 and 15ºC. Recommended to uncork on days under Fire influence according to Tasting Calendar.
Distinction: 88 points in Peñin Guide 2014 with 5 stars for price/quality ratio; 88 points in the Guía del vino cotidiano 2014-2015 of Mi Vino-Vinum.

WINE WITH EARTH QUALITIES

Uncork in purple days according to

the Tasting Calendar

Dionisos Tierra

Variety: 100% Tempranillo
Harvest: 2010
% Vol.: 13.5
Certification: Tierra de Castilla wine, certified “ORGANIC” by CAAE Spain
Vineyard: El Corcobillo, over 80 years old, is planted on clayey slightly inclined plots facing North. Yields are weak: around 1kg per grapevine.
Elaboration: harvested by hand in September, it ferments in clay amphorae with its own yeasts. Malolactic fermentation occurs in clay amphorae as well where wine gains maturity. It is aged in new French oak barrels during twelve lunar cycles (approx.: 11 months). It is then bottled and kept for 6 years.
Cosmic Calendar: with the aim of developing all the aromas and flavours of the constituting soils where it comes from, we have proceeded all the cultivation and elaboration works when the Moon was in front of Earth constellations (Taurus, Virgo and Capricornus). Thus, we have obtained a wine which expresses the character of terroir.
Tasting note: of dark garnet shaded colour, he has a good quality global aspect. Its mineral aromas proceeding from calcareous soils, and its hint of liquorice and red berries stand out off a toasted and balsamic background, with a surprising fresh and juvenile breath. Deep, tasty and full bodied but wrapped into a velvety taste, magnificent in the retronasal passage.
Consumption: wine enjoying a long conservation period. Perfect to come along with braised or roasted red meats. Ideal marriage with game and mushrooms. Serve between 17 and 18ºC. Due to its naturality and filtering absence, deposit is likely to be found in the bottom of the bottle. It is recommended to uncork during days under Earth influence according to the Tasting Calendar and in advance.
