Pre-phylloxeric family winery

The family of vintners of La Bodega de las Estrellas has already reached five generations. A vocation that begins in the mid-nineteenth century when the vineyard expands in the central region of Castilla, as a result of the strong commercial development due to the arrival of phylloxera to Europe that is killing the vineyards; while here it comes later and is not so devastating, since the soils of this region, of a permeable nature created a resistance to the plague and unlike the rest of spanish and european territories, replanting was not widespread.

Rewards and history


Silver Medal (1929)

The achievements of the first generations were rewarded with the Silver Medal in white and red wines of the 1928 harvest, in the National Wine Competition of International Exhibition of Barcelona (1929).


Gold Medal (2003)

In 1996 the fifth family generation with Dionisio and Karina at the helm, take over the winery and in the face of the productivist and denaturing trend in the sector, chooses to evolve in the search for authenticity and true quality, which is consolidated with the Gold Medal, in the International Competition of Organic Wines Biofach 2003 and the beautiful but difficult path of the independent vintner with organic cultivation of the vineyards and natural elaboration of wines.



Having maintained and used the heritage of family elaboration, makes possible today a differentiation in the wines, since being faithful to the tradition, makes us original, since the rest of the wineries have derived to technological models and "creative" oenology.


Undoubtedly, the essential motivation is based on the conviction of Dionisio de Nova, pioneer in spain of Organic Agriculture, with extensive experience in the promotion, training and advice in the 80s of the last century, which got the 4th family generation to produce the first organic wine of Castilla La Mancha in 1984.

From his studies in Agricultural Engineering in Barcelona, Dionisio starts with other colleagues the first group in Spain of this alternative movement.

We define ourselves as an Independent Vintner: Expression that synthesizes our purposes: vintner, from the French term vigneron integrates the person who cultivates his vineyards and with them he makes his wine. In Spanish there is no term that group the two activities. The adjective independent is due to the freedom and ease that it offers to our work to be outside of corporate structures.


Commitment to the Earth
and people

Our commitment is not to use systems or products that affect living beings, pollute the environment and/or limit biodiversity. So is practices that ensure efficiency, sustainability and natural quality in our wines.

Organic agriculture has always been our commitment to the Earth and the quality of its fruits.
Our contribution of the evolution of the biological model has been the implementation of the Moon Phases Calendar in the work of the vineyard cultivation and winemaking, and the development of new ways and criteria of making wines, where naturalness is the goal.

Our commitment to the consumer is concretized in 2015 with the edition and promotion of: "Manifest in defense of the Wine Culture and its labeling" through which we intend to clarify the labeling of the wines, incorporating the list of ingredients in a mandatory way.


Vineyards and Organic Cultivation

We are on the edge of the great southern plain of the Castilla plateau: 200km south of Madrid.

The soils of the region of soft sedimentary undulations constitued by calcareous marls, are of great drainage and have in summer a great reverberation by their limestone outcrops, which facilitate a great capacity of maturing.

The Vineyards

The vineyards are located at about 680m of altitude (in the proximity of Valdepeñas). It is an area of Continental-Mediterranean climate of low rainfall, which favors a healthy vineyard without fungal diseases.
In vegetation, the vineyards enjoy sunny days that facilitate maturity and concentration, followed by cold nights that fix aromas of extraordinary finesse and complexity.

El Conuco estate is a large plain. The oldest varieties are, the white Airén and the red Tempranillo (here called Cencibel), which is undoubtedly one of the best Spanish varieties and that in these lands, offers aromatic wines, complex and suitable for young wines, aged in amphora or barrel. In 1995 Cabernet Sauvignon was planted; and in 2000 it was Syrah, whose fruits produce an extraordinary enrichment of mediterranean sensations to the wines. In 2007, Garnacha and Verdejo.


Another estate in the place "El Corcobillo". Oriented to the north on sloping, clay soils with quartzites, called "rubiales" for their strong red color due to iron oxides. Stroing soils, which more than 80 years, with few productions, from 1 to 2kg per vine; old strains of twisted trunks with a large warehouse of reserves and grapes of a lot of extract.

These vines are planted and driven in a low "glass" strain, in order to respect the maginificent adaptation achieved by generations of farmers in this dry and rigorous climate. Harvested by hand with grape selection in the countryside.

Organic farming

Raising the vines with natural fertilizers (compost made with part of our own processing waste and the complement of sheep manure) means that not only its production is balanced, but also has a magnificent capacity for vigor and rusticity.

Healthy vineyards that, with natural substances, sulfur and little else, we are able to protect effectively rewarding ourselves with magnificent fruits.

We are in a terrotory conducive to good maturations, capable of offering such complexity of aromas and natural flavors that make industrial yeasts and synthetic makeup pale.

Our main technical effort is focused on promoting this maturation, balancing that of the pulp with that of the skin or seeds. All the work converges here, from pruning and fertilization, to maintenance irrigation or green pruning.

Agriculture with cosmic
cycles and rythms

For 20 years we have been exploring the links between the vegetative cycle of the vines, their metabolism and the rythms tha the Sun, the Moon and the Stars print.

We recover the traidition and incorporate new knowledge and experimentation, based on the Lunar Calendar (Moon Phases Calendar), choose the best days for the different jobs in agriculture, whose basic purpose is to avoid the stress of work in the vineyard, promoting a calm metabolism that helps develop healthy plants, integrated into the territory and its climatology.

Every year we make our own calendar, implementing the three essential lunar cycles.

The Winery and the Elaboration

La Bodega de las Estrellas is located in a manor house that forms a set of housing and winery, according to the most traditional model of the region.

This centuries-old culture and the magnificent form of construction, endow the whole with extraordinary capabilities that allow wines to be made with means and technologies radically different from the usual ones.

The elaboration process

It has important particularities due to the condition of organic wines.

The grapes are received fresh and harvested by hand, at dawn, in premium wines, or mechanically harvested at night. At the optimum moment of maturity of the different varieties to ensure the presence of precursors of aromas and flavors, they are processed quickly from the vineyards.

We use the yeasts of the farm where the grapes are raised, without the addition of selected or foreign yeasts, to reinforce and ensure their authentic origin.
