AMPHORA WINES

Grapes
They come from old vines of the local varieties Cencibel, also known as Tempranillo and Airén, which is a white variety, both grown with an optimal adaptation to our arid climate and limestone soil. These varieties are organically cultivated according to the rhythms of the Moon. This results in grapes full of aromas and flavours which are able to create wines naturally and to express the sun concentration of our region.
Fermentation
Our fermentation has a double characteristic. Firstly, the natural yeast makes the process. Secondly, the fermentation takes places inside 19 clay jars from the XIXth Century of 5000 liters each. The especial characteristics that are conferred from these containers is connected with the capillarity effect and microoxigenation that eliminates astringencies, with the inert constitution that allows a respectful fermentation with the varietal characteristics and with the thermosetting effect that eases a calm fermentation. The result is intense but gently and fruity wine with completely original aromas and flavours.
Clay jar ageing
The clay jars ease the settlement of the particles, their shape, form and material allow a lateral adherence which improves the decantation and, inversely, eases the tiniest lees stirring. The ageing takes place for at least 4 years in the 7 clay jars of the cave. This improves the body and volume sensation, softening and rounding the tannines, stabilizing the aromas and enhancing significantly the aftertaste. Elegant and complex wines that keep the varietal characteristics.

Dionisos Blanco de Tinto

Type of wine: Blanc de Noir

Grape variety: Tempranillo 100%

Vintage: 2016

Vinification: We elaborate this wine with red Tempranillo grapes as if it was white wine, isolating the must immediately after the destemming. It is fermented at low temperature in big amphorae (tinajas) and, after settling, lightly filtered with cellulose and finally bottled.

The final result is a very surprising color and a contrast between the varietal characteristics of Tempranillo and the lightness and freshness of a white wine.

Tasting notes:

Sight: bright yellow color with pearly iridescence.

Smell: fresh and floral, wild berries aromas and yeasts.

Taste: with moderate acidity, gentle and tasty, with the fruity character of the Tempranillo variety.

Pairing: Creamy cheeses and pâtés.

Serving temperature: Between 6 and 7°C.

Dionisos Tempranillo

Type of wine: Red wine

Grape variety: Tempranillo 100%

Vintage: 2015

Certifications: wine of Tierra de Castilla certified organic by CAAE España

Vinification: The handpicked grapes ferment with their own wild yeasts in big amphorae with thick walls. Maceration of the grape with the skins during 8 days. The malolactic fermentation is completed in clay amphorae with bâtonnage of its lees. The wine matures here until bottling.

This wine has a high content of natural antioxidants and is undoubtedly the wine that shows the most ripened fruitiness and sweetness.

Tasting notes:

Sight: silky, deep and lively purple color

Smell: great intensity of ripeness, fleshy and sweet red berries.

Taste: velvety enveloping notes with a sensation of softness and overwhelming energy in mouth.

Pairing: Pâté, cheese and grilled meats.

Serving temperature: Between 14 and 15°C.

Dionisos Barrica

Type of wine: Red wine

Grape variety: Tempranillo 100%

Vintage: 2010

Vinification: It is fermented with its own wild yeasts and stored in clay jars between 6 months and one year. In the cellar's depth and quietness, this wine is aged in French and American oak barrels during 9 months. Once bottled it is stored 1 year in bottle.

Organic agriculture and winemaking in clay jars provide its varietal character, smoothening its tannins but preserving its robustness. Barrel ageing makes the wine complex and elegant with a balanced combination of fruits and toasted notes.

Due to a light filtration, slight settling may occur.

Tasting notes:

Sight: red dark cherry color with deep brick-colored iridescences.

Smell: ripe fruits and toasted notes captured from its time ageing.

Taste: round and easy to drink, long-lasting in mouth and a fleshiness that reminds the terroir.

Pairing: Roasts, poultry and ripe cheese.

Serving temperature: Between 17 and 19°C.

Dionisos EGO Barrica Natural

Type of wine: Red wine

Grape variety: Tempranillo 100%

Vintage: 2015

Vinification: The grapes have been selected and harvested by hand. It has fermented in oak barrels with its own indigenous yeasts on waning moon days, with soft and frequent pump overs. The malolactic fermentation was completed in oak barrels with bâtonnages. The wine has been aged nine months in new French oak barrels. Non filtered wine.

 NATURAL WINE. Exclusively made from grapes without any type of additive or denaturalizing process. WITHOUT ADDED SULPHITS.

 Tasting notes:

Dionisos EGO NATURAL is the wine of contrasts.

Sight: Brilliant with suggestive purple highlights.

Smell: Elegant mineral aromas and balsamic tones.

Taste: The mineral and balsamic characters contrast with the fruity sweetness of red berries.

Pairing: Soft meals, for example, Mediterranean rice. It can also be tasted without food.

Serving temperature: 18°C. Should be open previously.

Dionisos EGO Joven Natural

Type of wine: Red wine

Grape variety: Tempranillo 100%

Vinification: This wine comes from old vineyards of the local ecotype Cencibel (Tempranillo), cultivated in clay-calcareous soils with strong sunshine. Vineyard production is less than one kilogram per vine. The vineyards are cultivated in organic agriculture according to the cycles and rhythms of the Moon and stars. The grapes, harvested by hand in the early morning hours, are fermented with their own yeasts in centuries-old clay jars where they briefly ripen. It is bottled after a light filtration with cellulose.
Only grapes are used in its preparation, without sulphites, other artificial substances or denaturing processes.

Tasting notes: The essence of the sunny lands and the mastery of clay jars use is conveyed in this wine.

Sight: Violet red colour with a very intense layer.
Smell: Powerful in aromas of ripe raspberry and blackberry berries with milk aftertaste.
Taste: A concentrated and full-bodied wine with enveloping velvety gourmet sense.

Pairing: Different types of cured cheese and cold meat.

Serving temperature: 14º - 15 ºC. Can be opened previously.

Dionisos EGO AMPHORA

Vinification:

This wine has been made with handpicked grapes from the old vines of
Tempranillo grow in clayey land in bunch vines. Its low production and its
dry farming character (1.6 kg/vine) give us guarantees for an great
concentration in flavors and aromas.
It has been fermented with its own yeast and matured inside clay jars in the cave at 9 meters deep during 36 lunar cycles (2,7 years).  This is a flavorful, delicious and potent wine which expresses the calcareous character of our lands. It is the greatest expression of a four generations family winemakers' tradition.

Tasting notes:

Dionisos EGO is the wine of complexity and nuances.
Sight: dark blue, almost black, with purple hints.
Smell: elegant shades of mineral character and balsamic notes.
Taste: long lasting intensity leads to sweet fruitiness of berries and roots.
